Tacos are one of my family’s favorite meals to make and tortillas are so fun and versatile. The possibilities are endless. If you have sourdough discard and are looking for a delicious and creative way to use it, this recipe is for you. The best part is that they can be made in less than 45 minutes! The results are fantastic and the flavor is worth the time it takes to make it.

1/2 cup sourdough discard (100% hydration level 1:1:1)
1/4 Olive Oil or EVOO
1/3 cup warm water
1 2/3 cup All purpose Flour
1/2 teaspoon salt
Instructions:
- Mix the sourdough discard, oil, and warm water until mixed all the way through.
- Add in the flour and salt, mixing all the way through, so there is dry or flour spots.
- Knead the dough for 3-4 minutes.
- Cover the dough with a damp cloth and let the dough rest at room temperature for 30 minutes. Tip: If you house is colder, you can rest the dough in your oven with the oven light on.
- After resting, divide the dough into 8 pieces. Roll each piece into a ball and then flatten.
- Roll out each circle to 1/16″ thickness. The tortilla should be thin and nearly “see through”.
- Heat a cast iron skillet on medium heat. Do not add any oil.
- Heat each tortilla on the dry skillet until bubbles form, then flip. Tip: Cooking time can very as the pan continues to get hotter. Cooking time might start at one minute each side and reduce down to 20-30 seconds each time. It is important to keep an eye on it so that it doesn’t burn. You should see various brown spots on the tortilla from the cooking. These are welcomed and normal.
- If you are using this for a meal, you can serve them warm. If you are storing them for another time, it is recommended to let them cool all the way down before storing.
Storage Tips:
1. Countertop storage: Allow to cool completely. You can store in an airtight container, without refrigeration, for up to 5 days.
2. Freezer storage: Allow to cool completely. Place parchment paper between each tortilla before freezing. This can last for 6-8 months.
